Easy chunky tomato sauce.


Who doesn't want ALLLLL the comfort food on a Sunday?!?! Our last garden tomato is long gone (insert crying emoji)!! We used this as a quick and easy recipe when we were in a hurry for some sauce. This was one of about three different kinds we made this Summer. Our favorite was a roasted tomato sauce recipe we found on pinterest via my sister-in-laws pinning, but this one we created on out own, when we didn't want to make a trip to the store.



  1. Ingredients:
  2. 2 pounds fresh tomatoes, peeled and cored if you prefer. I wanted texture so as you can see I only sliced them up.
  3. 5 tablespoons unsalted butter
  4. 1 medium yellow onion, peeled and halved
  5. Salt, to taste
  6. Basil (optional)

  1. Directions: Place the tomatoes, butter, and halved onion in a medium saucepan.
  2. Bring the sauce to a boil, then lower the heat to a simmer, and cook for 45 minutes, or until the butter droplets separate from the tomato juices. Remove the onions.
  3. Using an immersion blender, pulse a few times to break up large chunks of tomato. Season to taste if necessary.

Jalepeno Mac





We LOVE comfort food, and is there any better comfort food than mac & cheese?!



Ingredients

1lb. elbow macaroni
2c. sharp cheddar cheese
2lb. mild cheddar cheese
1/4c. butter
milk to desired consistency
Snyder of Berlin Hot & Spicy JalapeƱo potato chips


Cook macaroni, drain, and return to pot.
Add in cheeses and butter stir until melted to avoid burning.
Pour in milk until desired consistency.
Serve and top with crushed potato chips.

Easy Guac


I am a lover of guacamole, but I'm also a lover of convince and the fast and easy. A relative of mine makes THEE best guac and puts this stuff to shame. We always have these ingredients in our kitchen so this makes for a nice snack to whip up to go along with The Voice,  those presidential debates, or just to take to a friends house real quick.



6 avacados, mashed
(I just use a fork, or you could run it through the food processor-but who needs those extra dishes & mess?)
1/2 c. of Salsa
Garlic Salt, to your liking
about 3 tbsp. of Lemon juice, just enough to keep it from turning brown on you real quick


Don't forget the tortilla chips and that's it! No, really, that's it!

Our Current Favorite Breakfast: Blueberry Waffles



1 3/4 c. of flour
   2 tsp. of baking powder
1/2 tsp. of salt
2 tbs. of sugar
1 1/2 c. milk
2 eggs
1/2 c. canola oil
1 tbs. of vanilla ext.
mix in blueberries

My waffle iron has been one of my most favorite and most used gifts ever! Invest in one, they make breakfast time yummy. 

We also use our waffle iron for grilled cheese and to make Waffle B.L.T's <--- you can click there to find the recipe and yummy pictures for that.


Top with syrup, whipped cream and a little more blueberries.

Summer Steak Salad and Balsamic Dressing Recipe


Super depressed that this is the last little bit of Summer. One of my favorite things about Summer besides the sun, and the outdoors, and swimming, and vacations, is the garden veggies. David and I never, ever, ever eat red meat, we cut it our of our diets a long time ago, me much longer than David, but upon starting a c l e a n eating diet, we were growing tired of eating so much chicken and decided to bite the bullet and find the leanest beef possible to make a summer salad. We have since not eaten red meat-we are ground turkey lovers.

Our favorite summer dinner is by far a good salad with all the yummy veggies, fresh lettuce, tomatoes, and red and orange bell peppers. We also add olives and feta cheese, some steak (this time anyway), and some homage balsamic dressing.

Balsamic Dressing
1/3 c. balsamic vinegar
1 small onion, chopped finely
2 tbs. brown sugar
1/2 c. olive oil
1 tbs. honey mustard

Fresh Green Bean Dinner


I've bought fresh green beans this summer and I've had them given to be by the bag load! I love em! Give me all the green beans, because I know before long they will be sparse. I'm all about quick dinners and this tops the list of quick and easy.

Coconut oil 
Fresh green beans
Chicken
Teriyaki sauce
Garlic
Brown rice

Cook chicken in skillet with a tablespoon of coconut oil. Once cooked add teriyaki sauce, green beans, and garlic. While you have all of that in the skillet cook your brown rice separately. Easy, peasy, all done, serve your family!

Blueberry Honey Popsicles

I'm always looking for a fun, yummy, summer treat to snack on while outside in the evenings watching the dogs running around in the yard and these yummy Popsicles do the trick!!

1 3/4 c. Of vanilla yogurt
1 c. Blueberries
1/2 tbs. of honey

Mix your blueberries and honey together. 
If you do not want whole blueberries in your Popsicles then place everything in your blender.
If you want whole berries, like myself, add your yogurt and fill your Popsicle molds and place in the freezer for at least 24 hours. 
When your ready to enjoy, depending on the type of molds you have you may have to submerge them in some warm water to get them out. 
Enjoy, summers almost gone!

Clean eating: Chicken and wild rice stuffed peppers.

Chicken and Wild Rice Stuffed Peppers

Chili Lime seasoning
Garlic powder
2 Chicken Breasts
3 Bell Peppers
1 medium tomato
1 small onion
5 oz. wild rice
Mozzarella or Cheddar cheese or both


Cut, clean, and rinse your bell peppers. I cut mine longways to fit more in. While I was doing this I had my chicken, sprinkled with chili lime seasoning (mine is from Pampered Chef) and garlic powder, baking at 350 degrees for 25 min.
Cut and clean out your peppers

Chicken and Wild rice mix
Once your chicken and wild rice is cooked separately, shred your chicken and combine with wild rice. Cut up your tomato and onion and onion and combine into your chicken and rice mixture as well.


Once you have combined all your ingredients you can stuff your peppers and then sprinkle with a little or a lot of cheese and bake for 15 min at 350 degrees, or until your pepper is cooked through.

Waffle B.L.T. and my homemade waffle recipe!

WAFFLE RECIPE
1 3/4 c. of flour
   2 tsp. of baking powder
1/2 tsp. of salt
2 tbs. of sugar
1 1/2 c. milk
2 eggs
1/2 c. canola oil
if i'm making breakfast waffles I add 1 tbs of vanilla ext.





















Top your waffle off with a little B(turkey bacon). L.T.

Friday Pizza Night

 If you happen to ever show up at our house on a Friday evening, we will be having pizza. Pizza seems to be a Friday tradition most any place you go. Nothing says lets celebrate the week like CARBS!
On Fridays it has to be quick so I don't waste time making my own dough, its Pillsbury in a can! I like to roll out the dough as thin as I can but if you like is thicker, don't roll it out as thin. I drizzle a little bit of olive oil and a pinch of salt over the dough.




After 5 minutes in the oven.


I'm not a fan of the pizza sauce in a jar taste so I use a regular tomato basil pasta sauce from a jar, like I said we're simple here! I sprinkle a little basil over top the sauce and bake with just the sauce for 5 min at 350. If you have a pizza stone this makes the best pizza, mine happened to crack and I awaiting for a replacement to come in!

Next add your mozzerella cheese and bake for another 3-5 minutes

Before the  final 5 minutes in the oven.

Slice your tomatoes, drizzle with Balsamic Italian Dressing, and sprinkle on some oregano and bake for another 5 min.


Now your ready to enjoy a Friday evening at home eating Pizza and watching movies!

Tomato Bisque Soup

28 oz. can of crushed tomatoes
28 oz. can of diced tomatoes
14 oz. can of chicken broth
1 tablespoon of garlic
1/3 cup of butter
2 tablespoons of sugar
2 cups of heavy whipping cream

Bring tomatoes, broth, and garlic to boil, reduce heat to low and add butter and sugar. Stir until melted. Once butter is melted, slowly add cream while stirring!

Egg Nog French Toast!

Egg Nog French Toast Recipe

5 eggs
1 1/2 cups of egg nog
1 tbsp. of nutmeg
Bread

Makes about 10 slices of French toast! 

I make this several days before Christmas, because tradition in our family is eating the Christmas cookies for breakfast! Enjoy!

Zucchini Pizza Bites.


You gotta try these! I admit I was skeptical at first.
Simply cut up your zucchini in half inch slices and lay them on a cookie sheet. Next drizzle a little bit of olive oil on the slices and sprinkle on some salt and pepper to taste. Add your sauce and some basil followed by mozzarella cheese and any toppings you choose. I was hoping I had some olives, but as you can see we didn't, so try some with some black olives for me! Pop them in the oven on 400 degrees for about 5-7 minutes, they don't take long, and wahlah, you have yourself some yummy appetizers or in our case a nice healthy lunch!

Blackberries and Juice.


After living in our house for 11 months and 5 days, I JUST discovered that we have a patch of blackberry bushes. If you can just imagine for a minute my husband in the yard burning garbage and the loud "OH MY GOODNESS" shout that I made very abruptly while cleaning a few things up in the yard, and my husbands hesitance to turn around in horror of what he might find. He is very used to the fact that I tend to be dramatic coupled with the many creatures that like to live on the property. In wild excitement I said "We have blackberry bushes...like a lot of blackberry bushes!" His unamused response was "I know." If you can also imagine the disappointment on my face as I contemplated all the blackberries that went to waste last season, just sad, but not this year! This year every last berry is going to be picked, even if I have to put on a full body suit to go in after them. The allergy attack that I had later that night was, in my book, still worth it compared to the gold mine I had found earlier!
I just recently became a juicer and blackberries are one of the ingredients. So if you juice, you MUST try this:
1 cup of blackberries
4 granny smith apples
2 handfuls of spinach
15 baby carrots
You can always give or take on the amount of each fruit you use.
